Week 1: 2nd of January – Sticky Toffee Loaf with Fudge Icing

Really building some baking momentum here! My second ‘Delia’s Cakes’ bake was the Sticky Toffee Loaf with Fudgy Icing. I love baking and equally enjoy eating cake but increasingly I try to bring larger amounts into the office to be enjoyed by other people – this earns me some brownie points with my colleagues at the same time as assisting me with not becoming a big fat pig (my weight loss resolution isn’t completely out of the window yet). Yesterday Rob’s colleagues asked ‘why doesn’t Lucy ever bake for us?’ so now I have even more mouths to feed that means even less cake for me (blessing in disguise). So my next bake had to satisfy the tooth of a team of hungry economists (one of whom is German and whose mother blew me away when she sent him an enormous chocolate brownie snowman birthday cake covered in white chocolate and Smarties, all the way from Hamburg; it weighed a ton but was completely delicious!)

So I set about it with aplomb and here is how it turned out:

Toffee Fudge Cake

I wouldn’t call it a triumph as such – Canary Wharf Waitrose and Tesco were both out of Treacle, as was my trusty Sainsbury’s local so I used extra golden syrup which resulted in the cake being less toffee-ie that I would have liked, but the fudge on top is absolutely delish! Goes really well with a cup of tea (just had some for breakfast… oh dear).
